Cuttaway Hill Estate is cradled in the mountains of the Southern Highlands in NSW, at 700m above sea level with all grapes being grown and harvested on the family owned estate. The Seven Daughters range of Cuttaway wines is represented by our logo - a typical Southern Highlands scene. The wines are selected each vintage to offer wine lovers a true taste of the Southern Highlands in a glass. Harvested: 20 April â10 May 2006 Region: Southern Highlands 100% Varieties: Cabernet 66% Merlot 34% Vineyard: Cuttaway & Allambie Vintage: A super premium vintage with warm dry conditions which resulted in intense varietal flavours and full maturity across all varieties. Analysis: Alcohol 14.0% pH 3.5 TA 7.0g/L RS 2.4 g/L Preservatives 220 Winemaking: A cool primary fermentation in stainless steel on skins for 16 days followed by full malolactic fermentation in selected medium toast French and American hogsheads for 20 months. Final blending with a light fining and filtering then sterile bottled under a screwcap finish. Seal: Screwcap Appearance: Vibrant ruby red Bouquet: Ripe dark plums with savoury oak notes Palate: A balanced palate of soft fruits with a hint of chocolate and cassis finished by ripe cabernet finish Cellaring: Best drinking to 2012 Serve with: Egg tagliatelle with a rich rabbit ragu sauce
