Tatachilla Partners Cabernet Shiraz 2009Named in honour of the founding Partners of the Tatachilla winery this wine is carefully blended with grapes selected from premium South Australian vineyards to provide a full flavoured easy drinking wine each vintage. Colour Dark Red. Bouquet Blackcurrant and ripe cherry aromas. Palate Juicy front palate of blackberries with hints of cinnamon and dark chocolate, the cabernet gives good tannic backbone and a generous round finish. Serving Pasta Bolognese, beef risotto, barbecued steak. Cellaring An early drinking, fruit driven style drinking well now. May be cellared for up to three years. Vintage Growing season 2009 was quite dry and gave us only one month above average rainfall in August. Summer was dry with a few scattered hot days in October and January, but most of summer was quite moderate. The yield was quite small for Shiraz and Cabernet due to a few hot days during vintage but quality was solid for both varieties. Vineyards A blend of fruit sourced from mature vineyard sites from South Australian vineyards. Vinification After crushing, the grapes were carefully handled and fermented separately to preserve the flavours of Shiraz and the tannic intensity of Cabernet Sauvignon. The two varieties were then blended after some malo-lactic fermentation. Sealed with screwcap to ensure premium quality and retain the freshness of the wine.
